White Bean Kale Salad


I've never been a fan of beans or kale. I decided to give this recipe a shot because it's a recreation of Erewhon's $14 salad. Let me tell you, it works!! I've made a few modification to the recipe. If you would like to see the original click here. I've been having this for lunch a few times a week. If I really like something, I'll eat it until I get sick of it. Anyone else?


Serving size: 4


Ingredients:

  • 6 cups kale de-stemmed and chopped into small pieces

  • 1 15 oz can of white beans drained and rinsed

  • 1 large avocado cut into cubes

  • 1/3 cup of your favorite nut. I like sliced toasted almonds. You can also use sunflower seeds or pepitas.

  • 1/4 cup hemp seeds

  • Sea salt & black pepper

Dressing:

  • 1 lemon juiced

  • 1 tbsp maple syrup

  • 1 tbsp Dijon mustard

  • 1/4 cup extra virgin olive oil

  • Pinch of salt


Instructions:

Prep your kale and place into a large bowl. Make your dressing by whisking together all ingredients and massage the dressing into the kale to soften up the leaves. Add remaining ingredients and serve!


Tip: Add in roasted sweet potato to make this a 11/10!
