Jalapeno Cornbread



A healthier cornbread that's super easy, moist, & delicious!


Ingredients

  • 1.5 cups cornmeal

  • 1/2 cup all purpose flour

  • 2 tsp baking powder

  • 1 tsp salt

  • 2 eggs

  • 1.5 cup plain non fat greek yogurt

  • 1/4 cup avocado oil or olive oil

  • 1/4 cup honey

  • 2 tbsp maple syrup

  • 2 tbsp milk of choice

  • 1 jalapeno - 1/2 sliced, 1/2 diced

  • Cooking spray or parchment cups

Directions

  1. Preheat oven to 375

  2. Mix dry ingredients in a large bowl

  3. Mix wet ingredients in a separate bowl

  4. Add wet ingredients to dry & mix

  5. Fold in seeded & diced 1/2 jalapeno

  6. Spray muffin tin with nonstick cooking spray or use parchment cups

  7. Spoon in your mixture

  8. Add a drizzle of honey and sliced jalapeno on top of each

  9. Bake in the oven for 20 - 25 mins. Be sure to check at 15 min and 20 mins because they can overbake quickly and get dry.
