Soft & Chewy Chia Seed Cookies


VEGAN, GLUTEN FREE, REFINED SUGAR FREE, GRAIN FREE


INGREDIENTS:⁣

  • 2.5 cups almond flour⁣

  • ½ – 3/4 cup coconut sugar⁣

  • ½ tsp baking soda

  • 1 tbsp chia seeds⁣

  • 1 cup nut (or seed) butter⁣

  • ½ cup maple syrup⁣ (or lakanto maple syrup)

  • 1 tbsp apple sauce⁣ or 1 tbsp of coconut oil (either works!)

  • 1 tsp pure vanilla extract⁣

  • 1 Dark Chocolate Bar⁣

  • salt flakes, for topping⁣

DIRECTIONS:⁣

  1. Combine all ingredients; extra points if you can refrigerate dough for 30 mins before baking ⁣

  2. Roll into about 7 balls and flatten into patties about 1/3 inch thick; place on cookie sheet⁣

  3. Bake at 350 for 10-12 minutes or until starting to brown⁣

  4. Add chocolate for 1 minute at the end ⁣

One of the great things about this recipe is that it doesn’t have to be precise!
